As long as someone doesn't utterly hate the idea of being messy, it can be awesome fun to get all dressed up and then completely destroy yourself with mess, and even more so if you're doing it to a friend while she does it back to you. It's something very few people get to experience for real simply because of the amount of work involved in cleaning up after a session, but doing it for a producer in a dungeon / studio where you can easily get cleaned up afterwards, all the hard work is done for you, and the outfits and messy substances to use are all provided, make it a much more reasonable proposition for someone.

As to the question, as Candy and Penny have said and I mentioned further up, the answer is "because it's fun." While I do pay my models I'm sure they could probably find non-messy work that would pay the same or more, and they'd be able to do a lot more scenes in one day than the three or four, or if we start at 10am and keep going till 2am, occasionally five scenes that we manage to do.
Shooting a number of wam scene is serious work. First there's selecting the outfits, that always takes a few hours of trying on clothes and shoes till we get things everyone is happy and comfortable wearing, and that look good. Then there'll be at least half an hour of prep work before we can start shooting, opening containers of food and/or mixing buckets of gunge. Each shoot itself will take at least 45 minutes to do followed by at least half an hour of hose-down wash off at the end. People who've not done it tend to underestimate just how much hard work general modelling is - and that's without a steadily increasing amount of custard being poured into your clothes. Then there's the time needed for the producer to clean up and reset the dungeon, while the models dry off, grab some snacks, dress in their next outfits and do their makeup and hair, all ready to get trashed again - an hour between scenes is common.
So yes, models get paid, and rightly so, but the ones who chose to do WAM rather than lingerie or latex or plain nude do so because they actually enjoy getting messy. And personally, when watching scenes, it's that "joy of mess" rather than a specific "I'm getting turned on" vibe that I look for. Even when watching someone having gunge poured into her gym knickers, and even if she is getting off on it, I'm wanting to see her react "fun" as well as "sexy". Ok, consider that some website owners are into wam (probably all of them) and hire models to create videos with.
