But for real, melty cheese curds and gravy; the only thing missing is a bed of fries. Hopefully I can be a worthy substitute for this iconic Canadian dish. Taking handfuls of gravy and cheese at a time I can hardly keep from dumping the whole pot I made over myself at once. Until I can't and do.
While I'm not normally one for savory messes, I felt the need to do something special for for my neighbor to the north on it's independence day. Happy Birthday Canada!

Basic poutine is dish consisting of fries covered in brown gravy and cheese curds. You can add different meats and toppings to make it how you like it though. It's a good way of getting rid of things in your fridge.

I'm also from the Midwest and it isn't really common around here (at least in my part of the Midwest - although I'd heard of it), but we do have a couple of places that serve it (all pretty recent menu additions). I just tried it the first time within the last six months at a local bar and grill that serves it (made with smoked brisket), and dear god is it the most delicious thing ever.

You could start something here Stella...wamming with speciality dishes from around the world . The poutine looks like a proper yucky bucket in that first shot...but you wear it very well
