So I have seen two primary executions of the pie sandwich in videos. Either the pies are delivered on the sides of the head, like earmuffs, with the face slightly or fully peeking out OR the faces are delivered to either side of the face, engulfing the face.
I've always assumed the pies delivered to the side of the head was done in error by a new producer or an inexperienced model. However, maybe I'm wrong and it's the preferred method?
I voted for "Sides of the Face" since that definitely gives the best facial coverage. However, the "Pie Earmuffs" method can be a funny gag too, as long as the victim has already been pied thoroughly enough and they already have a decent amount of coverage.
Generally, the pies (or cakes/flans) should be drawn into the face from around 45 degrees at either side of the head, following contact, they should both be agitated in a circular motion to cover/envelop the entire head. This is approximately the technique used in the famous Phoebe Rodriguez pie sandwich sequence (the starting position of the pies first being horizontal, close to the face to taunt the model).
In the examples below I demonstrate 3 methods of execution:
12" flan cases, heavy cream, on messy;
Standard 8" crust, heavy cream; on messy;
12" flan case, heavy cream, from clean. I can't show the clean face of this model but, prior to contact, it used the horizontal 'taunt' as described above.
I suggest two pies to the side of the face followed by 2 more to the side of the head, then one straight in the face and finally one on top of the head.... cover all angles for a thorough messing. Repeat as many times as you wish.
For me it's not the angle per say, it's the swirl they do when delivering. Has to be a good circular swirl with both pies to really obliterate the head.

I think we need a pseudo-technical name for this like "eccentric double side-pie locomotion" or something
I like both in concert with one another - start on the side of the head so you can see the model's reaction very clearly, and then smear them towards the center of the face for maximum coverage. Best of both worlds!
I think if the pies are filled and 'loaded' correctly, then it really shouldn't matter as they should completely engulf the head AND face at the same time. At least that what my home made pies do to my unfortunate victim (wife)
In my place, I apply it to the entire surface from the neck up, including the "side of the face" and the "side of the head". Since it is a pie sandwich, it also includes "face and back of the head" and "under the chin and top of the head". Therefore, I don't consider it one or the other.
A pie sandwich has to engulf the face for me. Pies hitting the side of the head/ears do nothing for me, they're a bit of a waste if anything. You've missed the target!
I hate to be the Debbie downer of the conversation, but I always fear the side pie because if it gets in your ears it's going to ruin your time. I got a nasty ear infection once because of it.
