looking for scenes where the model hated it, due to that it's probably more likely that they were one off scenes

Haha, is that Jessica? SS78? That was scripted, so.... Her "anger" and shock were just acting. There might've been a little bit of real life seeping in though, only because that was an old wedding dress she actually owned and I don't think she realized it would be totally ruined after. (Although I told her as much and she said, "It's fine, I'll never wear it again.")
Or all that slime might've just weighed the dress down, and since it was the final scene of the day, she was getting a little exhausted with the whole thing. Either way!
I can give you a list of clips where the model genuinely disliked it. It's a short one! Also, one of those would be Toshia's SS107 one with her in the hot corset and falling everywhere.... She was in a mood that day. It works for the scene but if you watch the RAW footage you can tell. The closing gag of her lying on the ground as pies dropped on her face had to be scrapped.... cuz after the second one, she basically said "That's it" and walked off to the shower.

I'm in the same boat as you in regards to these being some of my favorite scenes. I love the disgust, regret, and humiliation aspect of wam.

Lenny did a scene (Excessive Mess scene 318) where a model called Dizzy genuinely hated the multiple pieings she was getting from another girl. She complained throughout and It seemed a miracle to me that she finished the scene. Excellent and thorough pie coverage and strangely arousing!

Theres an old Lenny Sorge/Excessive Mess video where the model truly hated the experience. She was so angry during the shoot the pissed her pants during filming.

She was furious, and it was very uncomfortable. I had to edit it out, and you wouldn't know it by watching the video. I still have the footage, but I've never watched it. There's scenes out there where the woman REALLY enjoys getting revenge on the producer and it's not scripted. Some of them get really aggressive. Even if you like being gunged I would imagine there's incredible satisfaction being able to nail your producer with a pie or two.
