Just a ton of food coloring. It's not really that thick. Look at the slimed folks even ten seconds after getting slimed... It's already basically see-through. I would wager it's mostly Karo syrup.
I don't use the current NICK recipe because I like my slime to be actually thick, and cover the face & hair completely until the slimee finally wipes it off!
The clip above was clearly shot on a set. The only "slimings" at the actual game were in an area outside the court, in the kiosk. Two teams did a "Double Dare" contest at halftime but with no mess.
