Pretty much this. Note that you don't need very much powder to water--1 part powder to 100 parts water tends to do very well. Also, if you have options other than doing it by hand, I would recommend them because xanthan gum can get clumpy.
GREAT TIP when mixing this. Mix the xanthan gum powder with a small amount of oil, as little as you need to thoroughly mix it up. It will become a paste, and it will mix EASILY compared to trying to mix with water. Once you have it mixed, you then add it to whatever quantity of water you need, and it will not be difficult to mix. You should have no lumps or clumps to deal with.

Do you need boiling/hot/warm/cold water for this? Have always used boiling and waited impatiently before it cooled! If it works with cold water that would be great!

Its a lot more difficult to mix and the clean up is a lot more difficult. Unless you use an electric mixer you will get lumps. With Hydroxy Ethyl Cellulose (Natrosol for those who love designer brand names) or Methyl Cellulose it will dissolve easier with more water. Xantham does;t tend to dissolve that well.
We sell both easy mix Hydroxy Ethyl Cellulose Gunge and Xanthan. Our easy Mix HEC is 12.99 for 24 litres of a thick gunge or if you are on a budget we have pre coloured Xanthan at just 1.50 per 8 to 10 litres. Xantham is a cheap alternative if you need a lot of gunge on a budget but there is a trade off in mixability.
