It's emulisfier based having tried a few the Sosa emulisfier works best others are not as easy.
Basic recipe non diet soda and icing sugar match ml to grams easiest way to do this is 500no bottles and 500g boxes. Then add 1 spoon of emulisfier per 250 grams
This gives you a great cream base After that you can add nesquick milkshake powder or Angel delight to flavour and colour (Keswick works best). Or old school.custard powder (not instant) you can also thicken with corn flour etc.
After that the fun begins the recipe works with most liquids and creams I have used lemon curd most dairy free desserts and custards from allpro to name a few (just match gram to grams rather than no to grams). I have also used mascarpone cheese and frosting. To colour it powders work better than gels etc as these can make it a bit malty
