Hey! I need some advice for Nutella messy sessions. It's quite hot currently here in France so I tend to sweat during sessions, but when I'm covered with Nutella the sweat turns the Nutella into a strange sandy substance. So it's making some clear spots on my body, and the Nutella is not "wet" anymore.
Did that happen to anyone else? Is it really because of my sweat mixing with the Nutella?
Yeah, I do the same sometimes. When I get the 3kg tubs in bulk, I just stick them in the oven on low for a few minutes. It warms up perfectly and turns into this smooth, silky texture that's way easier to pour or cover yourself with. Pic from my last session below.
This is called seizing. The same happens when melted chocolate is exposed to moisture. Chocolate, Nutella, and nut butters are emulsions- a solid suspended in a liquid. When the balance is disturbed it breaks the emulsion and you get the gritty sandy gunk. Not really much you can do to prevent it other than not let it get wet. Maybe a fan or other cooling will help, or applying antiperspirant and powder to stay dry. Thinning out the nutella with oil could also work, though I prefer it thick.
