As a first time WAM purchaser, are there any payment options to WAM stores (ie. Vidown, UMD stores) that don't involve the bank knowing what we are buying?
Prepaid debit/gift cards work in anyone's credit card payment system. It's a requirement of Visa/MC/Disc that if you accept ANY of their branded card types, you have to accept all of them.
Note that all types of debit cards MUST be registered to a street address before you can use them online or at kiosks & gas station pumps, otherwise the charge will be denied. You normally do that online at the URL on the back of the card.
At Vidown, we also have our own internal payment system that can be funded with cash, money orders, or a few different types of crypto-currency. It's at https://softokens.com We've been seeing a lot of Bitcoin coming in this week due to the current high valuation.

At Vidown, we have our own merchant accounts with major banks and we accept all Visa, MC, and Discover branded cards. We do not work with any 3rd-party processing systems.
