Not lettuce, and not shredded, but I did once commission a custom once where the girls made "vegan" slime out of spinach and banana. The thickness depends on how well you blend it, of course. They blended it a bit too thin for my liking, but it still had a nice gross gloppy look to it. And as a bonus, it didn't need any food dye!
Not sure if I can post the screencaps here, but I'll at least try:

Grass cuttings, on the other hand, have a little more volume.
Thanks for your response! - You might very well be right in regards to the amount of lettuce required if you're making the slime purely from lettuce. I was thinking more of using it as an additive to like a smooth green gunge or cake mix slime. Also I'm not certain grass would breakdown in the same way despite being more abundant, plus, one would need to consider the likelihood of a possible allergic reaction with any grass cuttings involved.
I just find it interesting the variety of foodstuffs used throughout wet and messy activities from sweet to savory and was curious if there were any remaining avenues that hadn't been fully explored.

Oh this is very interesting! basically a Spinach Banana Smoothie - It looks great (a bit thin as stated) and a very interesting attempt at something different. Thank you for sharing.
I've always wondered if Bananas left out to "brown" would make for a unique texture/substance.
I'd love to know how it poured and how much raw material was required to produce the quantity used.

I don't remember exactly, but it was a LOT (pretty expensive compared to traditional slime recipes) and the pour was kind of intermittent - like a plop plop plop pour rather than a nice continuous stream. I still might experiment with it some more some day.
