You don't need a booth that obscures everything but her face, but you do need some sort of game element. I can understand not wanting to risk throwing the pies for the mess and potential waste, though you could overcome the mess by using cheap plastic painter's drop cloths. Even if the odds are still severely against your target, adding the element of chance that she'll escape unpied makes it all much more thrilling. You could setup a number of ways for her to try to stay clean and have her choose one. The lighter game, impossible quiz questions, tongue twisters, physical challenges, or any other thing can think up will add delicious tension and keep your target involved in the game. Of course, the very second that she fails her challenge, it's pie time!

Good suggestion on the game element. It really will be up to each customer with his pies on how he would like to pie the girl. So, we will be open to anything they want, so if it's a game element, then we will not say no.
