I believe this was on one of Hurley's old clip tapes, although I'd seen it as it aired on PBS. Anyhoo, it was a recap of Gleason's career/show or something and they showed part of a skit he did which ended with a pie fight.
He was playing the part of a buffoon, Art Carney was playing a gentleman and there was a beautiful brunette in a period Southern bell style dress, complete with an umbrella. She took a quick but nice pie in the face before it devolved into a pie free for all and they cut away.
I would really love to see this too. I saw this on TV years ago, don't remember where. Wamtec cliptapes 3718Ap.1 has a similar routine shown very briefly around the 50 minute mark. In that Art Carney is a cop and Jackie Gleason is carnival barker. The woman isn't dressed the same but is quite pretty.
