Yeah, I noticed that too. I figured she was breaking the crust up for a better "aftersplat" - the broken crust sliding down the face in pieces is aesthetically better than an intact crust, I think. Those girls would also often "bend" or "snap" a pie before delivering, I guess for the same reason.
