Enjoyment. It can be fun if there's a moment of fake shock / "you wouldn't dare" at the start, but rapidly giving way to "actually, mmmmm, that's rather nice, oh yeah, can I do the same to you?" as they feel the first of the mess flowing down into sensitive places.
For me its not forced in any way, its natural reactions no matter what that is, shocked, enjoyment, hating it, so long as it seems natural it works for me!
Natural reactions is definitely key. I've purchased a lot of videos where models try to fake something (usually being turned on) and the fakeness of it always ruins it for me.
Beyond that, enjoyment is important, but I really love those initial reactions of shock and surprise. And there's also something to be said for rueful acceptance.
There's a great PieZone video, of a game of Rock Paper Scissors Pie. One of the models - a Jillian maybe? - is an attractive brunette with gorgeous eyes. And whenever she loses, she just kind of leans forward and accepts her fate. I love it.
Surprised and embarrassed are the best initial reactions, then indignation if more pies are to come. Since I love slapstick comedy, I want to see someone that I can laugh at, which means that they can't appear to be in on the joke.
Simply having a good time and maybe getting silly. In private videos I made with friends, the good time everyone is having is apparent. And that can extend to some real eroticism. A couple being filmed can get very aroused.
One thing I dislike a lot are the films where the woman hardly reacts. In the still photos they look like mummies. No smiles, nothing.
You only see this from true wammers (not models) but the sense of joy when the first gunge or pie or whatever have you, of the session covers them. You can tell all that anticipation leading to that moment has has just burst. Its like electric on the skin. Some times it's a smile, sometimes it's a body reflex, or maybe it's a movement, but you can tell they wanted it badly and that they are in the realm of shear pleasure now. A good example of this that comes to mind is boychuckers trailers or videos. You can see it in her.
I like seeing enjoyment reactions when the laides het covered in mud like it's their second happy place. I also like when they just want to stay in the pit and never leave, and they just want to keep rubbing themselves until they climax with pleasure.

This, this and this is exactly what I try to do in my scenes. I love fun and silly scenes and really enjoy natural reactions...
My favorite reaction is a squeal of frustration or surprise. Years ago on Youtube their was a young girl going by Messy Mia that had my favorite reaction like that.
Honestly I'm not that fussy about what kind of reaction the "victim" has during a WAM scene. Just as long as they accept it and enjoy it. Nothing makes me more uncomfortable than watching a scene where the victim isn't enjoying it at all.
Definitely the shocked reaction. I enjoy the "aw man!" type as well. And I also like open enjoyment. No matter what the reaction, I like everything with a bit of 'cutsey' to it!

Also i love it when the model's voice gives a reaction, the models body language gives you a different reaction and then the model's eye gives another different reactions. All at the same time. Thats rare and again Amber from Mostwam does that so often
As a viewer, the stand out is the squirming before the mess - normally only for first timers, but not always. Such actions tend to be followed by fantastic natural reactions as the gunge is nothing like the impression handed out by the TV folks over the years (they probably didn't use freshly mixed stuff every time!) The more pleasant the feel, the easier it is to stay under the flow.
Of course, our natural reactions aren't always that great, I can just about out-react a mannequin...
