Do you notice a difference between Guar gum and Xanthan gum?
You can buy Xantham gum in many US markets now. Bob's Red Mill is a pretty common brand. It's usually with the "alternative flours" - people with gluten sensitivity use it in baking/cooking.
It's not especially cheap - between $10 and $15 for an 8 oz pack. My recollection is one pack is good for 3-4 gallons of water. I use an immersion blender to mix it - I don't think it can really be mixed by hand.
