So, when having a nice WAM session, I usual use ready made cartons of custard. However in a recent session, I wanted rather alot. So decided that I would use custard powder instead and make it myself On making though it turned out full of lumps. In all honesty I should have scrapped it and started again, but, being a bit of a Scrooge McDuck I decided to use it.
I must admit it was OK, and definitely a different feel to it, but not the nice smoothness of the premade stuff.
Does anyone else make there own? Either completely from scratch/with powder or do must people use premade cartons?
I tend to buy ready made custard but if you make your own you're probably better off using a paint mixer - I use one to mix natrasol hooked up to a cordless drill!
It really depends on the quantities if it's a smaller scene I do use premade custard but if we're trying to do big quantites I use instant to do this. Candy Custard has a really good blog post on this which might help.

Yeah, I'm a great follower of Candy, (we chatted a few times), and I would definitely recommend her blog, it is the How to guide for Sploshing. Unfortunately after using her instructions on custard making, I still failed

I usually use powdered custard or pudding (the premade stuff isn't often available where I live). Adding the powder to water (not the other way around) often helps - if you add a little powder at a time, there are less lumps. You should generally use a whisk, but I use the back of a spoon to smush the lumps as I go. You could also use a sifter, which is generally used for flour when making cakes, but it might work here. For large quantities we find the instant stuff more cost effective and produces less waste. I don't think I do anything particularly special when making the instant stuff. I tend to 3/4 fill a bucket with boiling water (leaving room for mixing) from the kettle then add all of the powder needed for the full bucket to the water. Mix that with the paint drill bit until its nice and smooth. Then top up with boiling water and finish off the mixing with a long spatula (the one I've got is for brewing beer). Then leave to cool for 3 or 4 hours, mixing a couple of times during to spread any hot spots out. It also thickens as it cools. The results are usually pretty smooth but some lumps do still form.
Also worth saying I once bought custard powder by mistake instead of instant custard which are two different things that behave completely different. The custard powder went very lumpy and translucent. I doubt you've made that mistake, but thought it worth mentioning.
