Whipped cream is not the stickiest of substances, and will just fall off of a vertical surface. The large volume of expanded whipped cream makes it a good supplement on the top of pies to make them seem messier.
Since it is full of air, whipped cream will quickly compress into a thin liquid as it warms. But the process of the air escaping lends a unique "texture" during the use of whipped cream. Its fluffy texture feels satisfying as it squishes down and compresses.
