It's not methylcellulose. Watch the video. It doesn't "wet" the skin, has elastic properties, and breaks in a straight line when stressed. Clearly non-newtonian and there aren't a lot of substances that exhibit those properties.
FYI, you can also use Elmer's Glue in the above recipe. It's made of PVA.
